Mango Salsa

To preserve the abundance of our mango season in a savory way, we lacto fermented our Tommy Atkins mangos with garlic chives and some habanero peppers for a slight kick to make this stable mango salsa.

The microorganisms provide all the acidity for the salsa by producing lactic acid, meanwhile they are also breaking down the natural sugars to slowly make the salsa more savory over time.

Amazing with seafood or plantain chips!

 Ingredients: Tommy Atkins mango, garlic chives, sweet onion, sea salt, habanero pepper
