Mango Jam
To preserve the abundance of our mango season in a sweet and simple way, we gently cooked our Tommy Atkins mango's to concentrate the naturally occuring sugars and added a bit of lime for acidity.
We then took all odds and ends of the fruit and dehydrated them into sweet chewy bites and mix them in after cooking the compote to add a fun chewy bite throughout. The compote is then water bath canned and sealed to preserve it, as always avoiding any added preservatives or sugars.
Serve with granola, charcuterie, use in baking or for a savory application it is also great with duck!
Ingredients: Tommy Atkins mango, dehydrated mango bits, lime.
